Could I (or you for that matter) increase power output by hooking an oxygen cylinder to my inlet/carbs and enrichening (sp?) the mixture? The fuel is burnt with oxygen so why not just feed it oxygen

yeah, but why not just O2. My understanding is that nitrous is good for short bursts only, lest your engine melts. Im thinking of a 'permanent' setup and when your oxy bottle is empty you just lean
